  • For Filling:
  • 300 g - Tuvar dal
  • 300 g - Jaggery (molasses)
  • 1 tsp - Cardamom powder
  • For dough:
  • 150 g - Wheat flour
  • 1 tbsp - Ghee
  • warm water to knead dough
  • Ghee to serve.
  • How to Make Gud-Dal Roti:

    1. Boil dal in plenty of water until soft but not broken. Drain in a colander for 10-15 minutes.
    2. Now grate the dal in an almond grater little by little .
    3. Mash the jaggery and mix into the dal.
    4. Now pour the mixture into a heavy saucepan and cook until it is soft and lumpy.
    5. Take care to stir continuously, so that it does not stick to the bottom. Keep aside.
    6. Now knead the dough with the flour and ghee, adding enough water to make it pliable.
    7. Then take a ball of dough and roll into a 4 inch round.
    8. Now place a same sized ball of the filling in the centre, wrap the outer layer around it.
    9. Now roll it out gently to a 6 inch diameter round.
    10. Roast both sides on a warm griddle until golden brown.
    11. Apply a tsp of ghee.
    12. Serve hot.
