Gujarati Puda is a tasty pancake with besan (gram flour), vegetables and spices. 

It is a special breakfast or snack recipe that goes well with toasted bread. Also known as Vegetarian Omelette, the Gujarati Puda can also be a meal in itself.  

The puda mix is made with channa flour (besan), suji, shredded green pepper, ginger, coriander, yoghurt and salt. Cook this mixture on a tawa just like an omelette and make thin pancakes.

Ingredients

  • 1 cup channa flour (Besan)
  • 3 cups suji (Rava)
  • 1 shredded green pepper and small shredded ginger
  • Salt to taste
  • 1/2 bunch coriander (Dhania)
  • 1 cup vegetable oil
  • 1/2 cup yogurt

How to Make Gujarati Puda (Vegetarian Omelette)

  • Mix besan, suji, shredded pepper, ginger, cut coriander, yogurt and salt.
  • Keep at room temperature for 2-3 hours.
  • On stove, at medium heat, warm flat tava or non-stick pan.
  • Put 1 tsp oil and pour some of the mixture over (just like omelette) to make thin puda.
  • Flip over to cook both sides well.
