Ingredients

  • 2 cups - Puffed lotus seeds
  • 2 tbsp - Gulkand/rose petal preserve
  • 4 cups - Milk
  • 3/4 cup - Sugar ( or less, if you want)
  • 1/2 tsp - Rose water
  • Few chopped nuts
  • 1tbsp - Ghee

How to Make Gulkhand Makhana Kheer

  • Heat the ghee in a pan, roast the puffed lotus seeds until they turns crispy.
  • Put (almost) a cup of the puffed lotus seeds in a mixer, grind till it turns a bit coarse.
  • Meanwhile bring the milk to a boil, add gulkand, sugar and cook until the sugar gets dissolved.
  • Now add the roasted puffed seeds and ground lotus seeds to the hot milk, cook on low for a few minutes.
  • Ground lotus seeds will thicken the kheer.
  • Finally add the rose water and turn off the heat.
  • Serve this kheer warm topped with chopped nuts.
