As the name implies, Guntur Chicken is a traditional chicken recipe of Andhra. It is Andhra style stewed chicken made with juicy meat and fresh ground spices. This gravy is so hot and spicy as it is prepared with special Guntur red chillies. It can be best served with boiled rice or can be enjoyed as a spicy starter dish.

Note: If you want the stewed Guntur chicken gravy to be dry, cook till whole of the moisture gets evaporated.

Ingredients

  • 1/2 kg - chicken
  • 1/4 tbsp - Guntur red chilli powder + 3/4 tbsp for marinating
  • Garam masala powder (coriander 21/2 tbsp + cinnamon 2 inch + cloves 6 + cardamom 3 + cumin 1/2 tsp + 6 pepper corn
  • 3 - onions, finely chopped.
  • 1 - green chilli, slit
  • 3/4 tsp - ginger garlic paste + 3/4 tsp for marinating
  • 3 tbsp - oil
  • 3 tbsp - poppy seeds
  • For marinating:
  • 3/4 tsp - ginger garlic paste
  • 1/8 tsp - turmeric
  • Salt
  • 4 tbsp - lemon juice
  • 3/4 tbsp - Guntur Red chilli powder
  • Whole spice
  • 1 - bay leaf
  • 3 - cloves
  • 2 - cardamom
  • 1 inch - cinnamon stick

How to Make Guntur Chicken

  • Wash chicken and marinate with the ingredients and set aside for at least 1 hour in a refrigerator
  • Heat oil in a deep pan, saute the whole spices in the oil for a minute
  • Add green chilli, onions and salt. Fry till onions turn golden brown evenly.
  • Add ginger-garlic paste and saute for a minute
  • Add the marinated chicken and fry on a high flame for 2 to 3 mins.
  • Add the rest of the chilli powder and garam masala mix well
  • Pour enough water to the chicken and mix well
  • Cover and cook till done.
  • Add the poppy seeds paste, stir well and cook till you get the required consistency. Serve hot.
