How to Make Hagalkai Gojju

  • Roast the ingredients to be ground in a pan in medium flame and powder it and keep aside.
  • Take oil in a pan, splutter mustard, add cut bitter gourd and fry till it becomes light golden brown.
  • Then add the red chillies, asafoetida, ginger and mix well with the powder.
  • Now add the tamarind water, boil till the gravy thickens.
  • Add jaggery and boil for another two minutes and remove from heat.
