Mash the potatoes and add the beaten eggs to them.
Mix well and add the rest of the ingredients, except the butter. Mix thoroughly and set aside.
Heat a pan, with butter or oil, on medium heat. Add the potato mixture and cook, until set and the edges turn light brown (adjust heat from low to medium). Turn over carefully, with a flat spatula and cook, until done.
Remove and cut into wedges.
Serve hot with boiled beans in tomato sauce.
