Ingredients

  • 1/2 cup - vegetable oil
  • 1/4 cup - Butter or margarine
  • 1 cup - onion, finely chopped
  • 1 tsp - dried Thyme
  • 1/4 tsp - pepper
  • 2 lb. - Red potatoes, quartered
  • Cilantro, finely chopped
  • 2 tbsp - Lemon juice
  • Salt
  • How to Make Herbed Oven Potatoes:

    1. In a shallow bowl combine oil, butter, onions, thyme and pepper.
    2. Add potatoes, a few at a time, toss to coat.
    3. Place in a single layer in a greased 15 inch X 10 inch X 1 inch baking pan.
    4. Bake, uncovered at 450 degrees for 50-55 min.
    5. Stir occasionally.
    6. Mix lemon juice, salt. Sprinkle with cilantro. Serve.
