Ingredients

  • 1/2 cup - vegetable oil
  • 1/4 cup - butter or margarine
  • 1 cup - onion, finely chopped
  • 1 tsp - dried thyme
  • 1/4 tsp - pepper
  • 2 lb. - Red potatoes, quartered
  • Cilantro, finely chopped
  • 2 tbsp - lemon juice
  • Salt

How to Make Herbed Oven Potatoes

  • In a shallow bowl combine oil, butter, onions, thyme and pepper.
  • Add potatoes, a few at a time, toss to coat.
  • Place in a single layer in a greased 15 inch X 10 inch X 1 inch baking pan.
  • Bake, uncovered at 450 degrees for 50-55 min.
  • Stir occasionally.
  • Mix lemon juice, salt. Sprinkle with cilantro. Serve.
