How to Make Hot brinjal pickle

  • Wash and cut brinjals into small cubes.
  • Grind the ingredients from 6-11 to a fine paste.
  • Sprinkle salt and keep for 2&1/2 hours.
  • Heat oil in a pan and fry the ground masala till golden.
  • Drain the brinjals and add to the fried masala.
  • Add the remaining powders, vinegar and crushed jiggery and stir cook for 4-5 mins.
  • Add the green chillies and simmer for a few mins,.
  • Remove from fire.
  • Cool thoroughly and bottle.
  • Ready for the table immediately.
