Ingredients

  • 6 small brinjals
  • 1 tbsp - coriander seeds
  • 1 tbsp - Cumin seeds
  • 1 tsp Mustard seeds
  • 1/2 tsp Cumin curry leaves
  • 1 tsp ground Ginger
  • 2 tsp Chilli Powder
  • 4 tbsp Coconut grated
  • 1 tsp Chirongi Nuts
  • 1 tsp Poppy seeds
  • 1 tbsp Sesame seeds
  • 2 tbsp Groundnuts [roasted]
  • 1 tsp Turmeric Powder
  • 30 ml Tamarind extract

How to Make Hyderabadi Brinjals

  • Slice brinjal without breaking stalks and fry.
  • [A] Roast and powder coriander and cumin.
  • [B] Grind together coconut, chironji nuts, poppy seeds and sesame seeds.
  • Heat oil in a large pan, splutter mustard and then cumin and curry leaves.
  • Cover pan, remove from heat and allow to cook for few minutes.
  • Now add ginger, garlic, turmeric, chilli and cook stirring continuously.
  • Add [B] masala and brinjal and cook on sim.
  • Do not stir but shake occasionally.
  • Pour tamarind pulp, [A] masala, shake pan and cook covered on sim for 15 minutes.
  • Do not reheat.
  • Serve it with rice/ roti.
