Ingredients

  • 2 cups - Idli Rava
  • 2 cups - Beaten Yoghurt
  • 1 - Piece of Ginger
  • 2 tsp - Salt
  • 1 tsp - Baking Soda
  • 2 - Green Chillies
  • For Red Idlis: 1 tsp - Red chilli Powder
  • 2 large Tomatoes, pureed
  • For Green Idlis: 1/2 cup - Chopped Cilantro
  • 1 Cup - Spinach, pureed
  • For Yellow Idlis: 1/2 cup - Yellow Corn meal
  • 1 tsp - Turmeric
  • For White Idlis: 1 cup - Ground rolled Oats
  • 1 cup - Chopped Coriander

How to Make Idli Bahaar

  • Mix curd, salt and rava together and keep aside for 20 minutes.
  • Make a paste of garlic and green chillies.
  • Also add baking soda and give a nice stir so that everything mixes up well.
  • Make four batches out of this batter in separate bowls.
  • In the first bowl, add pureed tomato and red chilli powder.
  • In the second one, add pureed spinach and cilantro.
  • In the third bowl, add corn meal and turmeric.
  • In the fourth one, add oats and coriander.
  • Now in an idli maker, pour the four batters in separate moulds.
  • Steam for 20 minutes, first on high flame, and then on low flame.
  • Stick them out when cool.
