How to Make Indian Drumstick Kootu

  • Boil about 3 cups of water and add sambar powder and salt to it.
  • Cut the drumsticks into 2-inch pieces and add to the boiling water. Cook well.
  • Heat oil in a pan and fry the red chillies, pepper, urad dal, gram dal, asafoetida and coconut until golden and grind together.
  • Add the paste to the cooked drumsticks.
  • Add the cooked toor dal.
  • If the kootu is slightly watery, mix some rice flour with water and add to it to get the required consistency.
  • Splutter some mustard and urad dal in oil and add to the kootu.
  • Garnish with curry leaves.
