Ingredients

  • 1/2 cup - Paneer cubes
  • 1/4 cup - Spring onions separate green and white parts
  • 1 cup - Cauliflower
  • Handful - Green peas
  • 1/2 cup - Capsicum
  • 1 - large potato, boiled
  • 1 - large carrot, chopped small
  • 1 - small Tomato
  • Herbs and spices
  • 3/4 tsp - dried Fenugreek leaves
  • A pinch - amchur powder (dry Mango powder)
  • White pepper powder - 1/2 tsp
  • A pinch - kitchen king masala or Meat masala
  • salt to taste
  • Ginger - optional
  • For Tempering:
  • Oil as needed
  • Pinch - mustard
  • Pinch - cumin
  • Curry leaves - a few
  • A pinch - of asafetida
  • How to Make Indian Mixed vegetable stir fry:

    1. Heat oil in a pan, fry paneer and set aside
    2. Add curry leaves, mustard, cumin, saute add ginger.
    3. Add spring onions (white part), cauliflower and green peas
    4. Add turmeric, salt and mix, cover and cook till cauliflower is half cooked
    5. Add carrots, potato, capsicum, tomato, salt and fry till all the vegetables are evenly cooked
    6. Sprinkle fenugreek leaves, amchur powder, masala powder, pepper powder and toss
    7. Add green part of the spring onions, toss and remove from heat
    8. Serve.
