Ingredients

  • 1.5 cups - water
  • 1/3 cup - toasted cashew
  • 1/4 cup - Lemon juice
  • 2 tsp - Ghee
  • 1 tsp - mustard
  • 1 tsp - Red Chilli powder
  • 1/4 tsp - Asafoetida
  • 3 - Tomatoes
  • 10 ounces - Pasta
  • 8 ounces - green beans
  • Salt and pepper to taste
  • 1/2 cup - chopped coriander
  • How to Make Indian Pasta Salad:

    1. Blend water, half the quantity of nuts and lemon juice until smooth.
    2. Heat ghee, add mustard seeds.
    3. When they splutter, add asafoetida.
    4. Then add tomatoes, chilli powder and cashew puree and remove from heat.
    5. Boil a large pot of salted water add the green beans.
    6. When the beans become tender, stir in the pasta.
    7. Cook the pasta until tender and firm.
    8. Drain well and add the pasta to the ingredients in the saucepan.
    9. Season with salt and pepper.
    10. Garnish with coriander and the remaining cashews.
