  • Raw Rice - 1 cup
  • Thick Beaten Rice (poha, avil) - 1/2 cup
  • For Filling:
  • Grated Coconut - 1 cup
  • Jaggery powder - 1 cup
  • Cardamom powder - 1/4 tsp
  • Salt
  • Banana leaves or aluminium foil to steam the batter.
  • How to Make Indian Patholi:

    1. Soak rice in water for 3-4 hrs.
    2. Soak beaten rice in water for 15 minutes.
    3. Grind rice with 4 tbsp of coconut and a pinch of salt till smooth.
    4. Then add beaten rice, 1 tbsp of jaggery powder and water and grind to make a creamy batter.
    5. For the filling, cook remaining coconut and jaggery, stirring continuously till the jaggery melts and forms a smooth dough.
    6. Add cardamom powder.
    7. Take about 6-8" pieces of banana leaves and soften them over a flame. You could also use aluminium foil.
    8. Spread the batter thinly on them.
    9. Place 2 tsps of the filling in centre and fold the leaves or foil to enclose the batter with the filling.
    10. Place the folded parcels in a steamer/cooker and steam for approximately 15 minutes.
    11. When cooled, peel the leaves or foil and serve with hot, melted ghee.
