How to Make Indian Patholi

  • Soak rice in water for 3-4 hrs.
  • Soak beaten rice in water for 15 minutes.
  • Grind rice with 4 tbsp of coconut and a pinch of salt till smooth.
  • Then add beaten rice, 1 tbsp of jaggery powder and water and grind to make a creamy batter.
  • For the filling, cook remaining coconut and jaggery, stirring continuously till the jaggery melts and forms a smooth dough.
  • Add cardamom powder.
  • Take about 6-8" pieces of banana leaves and soften them over a flame. You could also use aluminium foil.
  • Spread the batter thinly on them.
  • Place 2 tsps of the filling in centre and fold the leaves or foil to enclose the batter with the filling.
  • Place the folded parcels in a steamer/cooker and steam for approximately 15 minutes.
  • When cooled, peel the leaves or foil and serve with hot, melted ghee.
