Ingredients

  • 1 kg - cleaned prawns
  • 1 tbsp - turmeric paste
  • 2 tsp - chilli paste
  • 1 tsp - coriander paste
  • 1 tsp - cumin paste
  • 2 tsp - ginger paste
  • 1/2 tsp - garlic paste
  • 1 tsp - mustard paste
  • Salt to taste
  • 2 tsp - sugar or to taste
  • 3-4 tbsp - Vinegar
  • 100g mustard oil
  • 2-3 cups - water

How to Make Indian Prawn vindaloo

  • Heat oil in a deep heavy pan.
  • Add the next seven ingredients after prawns.
  • Fry for several minutes.
  • Add vinegar and the prawns.
  • Keep frying until all the vinegar is absorbed.
  • Add water and let it come to the boil.
  • Add salt and sugar
  • Simmer for 20 mins. or until the water is reduced by about a quarter and the prawns are cooked. Remove from heat.
  • Reheat before serving.
