How to Make Instant Sweet Mango Pickle

  • Dry roast the mustard seeds and fenugreek seeds for few seconds, grind to a fine powder and keep aside
  • Heat enough oil, splutter the mustard seeds.
  • Then add the chopped shallots and saute until they turn translucent.
  • Add the cubed mango bits, red chilli powder and salt, cook for few minutes.
  • Add enough water, jaggery and cook until the mangoes get well cooked.
  • Finally add the spice powder, give a stir and turn off the stove
  • Once the pickle gets cooled, conserve them in air tight box
