Ingredients

  • 1 kg - Beef or Mutton
  • 10 gms - Cardamoms
  • 10 gms - chillies, red dry
  • 250 gms - condensed Milk malai or nestle
  • 250 gms - curds
  • 20 gms - Garlic (to be ground)
  • 250 gms - Ghee
  • 20 gms - Ginger (to be ground)
  • 4 - Lime (fresh) (juice to be taken out)
  • 250 gms - Onions (to be sliced)
  • 3 bits - turmeric/haldi

How to Make Irani Khorma

  • Clean and cut the meat in long pieces.
  • Heat the ghee, add 3/4th of the sliced onions, with the ground garlic.
  • Fry until brown, then remove.
  • Fry the meat in the same ghee, until almost brown.
  • Then add the ground ginger.
  • Now fry the meat and ginger until brown.
  • Add all the other ingredients, including the fried onions.
  • Cook on a slow fire, until the meat is tender.
