Ingredients

  • 1 kg - Beef or Mutton
  • 10 gms - Cardamoms
  • 10 gms - chillies, red dry
  • 250 gms - condensed Milk malai or nestle
  • 250 gms - curds
  • 20 gms - Garlic (to be ground)
  • 250 gms - Ghee
  • 20 gms - Ginger (to be ground)
  • 4 - Lime (fresh) (juice to be taken out)
  • 250 gms - Onions (to be sliced)
  • 3 bits - turmeric/haldi
  • How to Make Irani Khorma:

    1. Clean and cut the meat in long pieces.
    2. Heat the ghee, add 3/4th of the sliced onions, with the ground garlic.
    3. Fry until brown, then remove.
    4. Fry the meat in the same ghee, until almost brown.
    5. Then add the ground ginger.
    6. Now fry the meat and ginger until brown.
    7. Add all the other ingredients, including the fried onions.
    8. Cook on a slow fire, until the meat is tender.
