Ingredients

  • ?kg - baby Potatoes
  • 2 to 3 tbsp - oil
  • 2 Bay Leaves
  • 2 to 3 Cloves
  • 1 stick Cinnamon
  • 2 to 3 whole kashmiri chillies
  • 1.5 tsp - Cumin seeds
  • ?tsp - Asafoetida powder
  • 3 to 4 tbsp - heaped coriander & Cumin seed powder
  • 1 to 2 tsp - Red Chilli powder
  • 1 heaped tsp - Mango powder
  • ?tsp - Garam Masala powder
  • Salt to taste
  • To Garnish:
  • 2 to 3 tbsp - finely chopped Coriander leaves
  • How to Make Jeera (Cumin Seeds) Aloo:

    1. Pressure cook the potatoes with a little salt till 2 whistles.
    2. Cool and peel.
    3. In a big kadai, lightly heat oil.
    4. Add bay leaves, whole red chillies, cloves and cinnamon stick.
    5. Saute lightly.
    6. Add cumin seeds and asafoetida powder.
    7. When the seeds splutter, lower the flame, add the coriander-cumin seed powder and keep stirring for few minutes till it is dark brown.
    8. Add boiled baby potatoes and mix well.
    9. Cook on a low flame till the potatoes are well coated with the masalas.
    10. Add salt, red chilli powder, mango powder and garam masala powder.
    11. Mix thoroughly and simmer for 5 minutes.
    12. Garnish with coriander leaves.
    13. Serve with hot parathas, mango pickle and curds.
