  • 2 cups - Rice
  • 2 tbsp - Cumin seeds
  • 2 tbsp - Halved cashews
  • 9 to 10 - Whole pepper Corns
  • 2 - Bay Leaves
  • 5 cups - Water (approx.)
  • 2 tsp - Sugar
  • 1/2 tsp - Clove-cinnamon powder
  • 4 - Onions, cut into rings
  • 4 tbsp - Ghee
  • Salt to taste
  • How to Make Jeera Fried Rice in 10 minutes:

    1. Wash rice well and soak in salt water for about half an hour.
    2. Heat ghee in a heavy bottomed pan.
    3. Add onions and fry till dark brown and crisp.
    4. Drain and keep aside.
    5. To the same pan, add cashews.
    6. Fry till it turns light brown, drain and keep side.
    7. Add jeera, peppercorns, bay leaf to the ghee.
    8. Stir fry for a few seconds.
    9. Drain and add rice.
    10. Keep the drained water aside.
    11. Add sugar, stir gently, frying rice till light brown.
    12. Add the spice powder and stir.
    13. Add salt water and bring to a boil.
    14. Simmer covered, till rice is cooked and water evaporates.
    15. Each grain should be separate.
    16. Serve hot with dal fry, rajma or a spicy gravy vegetable.
    17. Roasted pepper papad can be served as an accompaniment to this dish.
