Ingredients

  • 1/2 kg - pumpkin, cut in cubes
  • 2 - potatoes, cut in cubes
  • 2 - onion, thinly sliced
  • 2 - tomatoes, chopped
  • 4 - green chillies, chopped
  • 2 tsp - cumin seeds
  • 1/2 tsp - asafetida
  • Spices
  • 1 tsp - turmeric powder
  • 2 tsp - coriander powder
  • 1 tsp - red chilli powder
  • Salt to taste
  • 2 tsp - garam masala
  • 2 tsp - tamarind pulp
  • 1/2 cup - curry leaves, chopped
  • 4 tbsp - vegetable oil

How to Make Kaddu Mazedaar (Pumpkin Dry Curry)

  • Heat oil and add asafoetida and cumin seeds and stir for a minute.
  • Add sliced onions and stir for 5 minutes till translucent.
  • Mix all spices and salt to it.
  • Add pumpkin cubes, potato cubes, mix and cook covered on low heat for 10-15 minutes.
  • Finally add tamarind pulp, tomato and green chillies.
  • Cook for another 10 minutes till tomatoes are done and oil separates.
  • Garnish with chopped curry leaves.
  • Serve hot.
