  • 250 gms. Cashewnuts (kaju)
  • 250 gms. (1 cup) Sugar
  • 1 cup Milk
  • Vark (silver leaves) for decoration (optional)
  • How to Make Kaju Ki Barfi:

    1. Blend together the cashews and milk very finely, in a blender. Put the paste in a kadhai, add sugar and cook over a low flame, stirring till the sugar dissolves and then bring to a boil.
    2. Continue stirring over medium flame, till mixture collects together and becomes dough-like.
    3. Remove from flame and when cool enough to handle, roll on to a greased surface, with a greased rolling pin to ΒΌ cm thickness.
    4. Cover with the vark and when cooled, cut into diamond shapes pieces and transfer onto a serving dish.
