Ingredients

  • For red chori dumplings:
  • 2 cups - red chori beans, soaked
  • 1 - onion, chopped
  • 2 - green chillies, chopped
  • 1 tsp - fennel seeds
  • 1 tsp - ginger, chopped
  • 2 - garlic, crushed
  • Salt
  • For Gravy:
  • 15 - steamed red chori dumplings
  • 1.5 cups - tamarind extract
  • 1 tsp - red chilli powder
  • 1 tsp - coriander powder
  • 15 - shallots, cubed
  • 1 - tomato
  • 5 - garlic cloves, crushed
  • 1/2 tsp - mustard seeds
  • 1/4 tsp - fenugreek seed
  • 1/2 tsp - cumin seeds
  • A few - curry leaves
  • Sesame oil
  • Salt
  • To grind:
  • 1/4 cup - grated coconut
  • 1 tsp - pepper corns
  • 5 - shallots

How to Make Karamani Urundai Kuzhambu

  • Wash thoroughly the red chori beans and grind with fennel seeds and salt to a coarse paste
  • Add the chopped onion pieces, chopped green chilli pieces, crushed garlic, ginger pieces, curry leaves and mix well
  • Take a small portion and roll them as small lemon sized balls, and make the dumplings.
  • Steam the dumplings for 10 mins.
  • Grind the grated coconut, pepper corns and shallots into a fine paste along with water and keep aside.
  • Heat enough sesame oil, splutters the mustard seeds, fenugreek seeds, curry leaves and cumin seeds
  • Add the cubed shallots, crushed garlic cloves, salt and chopped tomatoes, saute everything until the onions turn translucent.
  • Add the ground paste and cook in low flame until the oil separates
  • Now add the tamarind extract, red chilli powder and coriander powder along with salt and cook the gravy, till the oil separates
  • Finally add the already prepared dumplings, simmer for few mins. Serve.
