Ingredients

  • 500 gms - Maida
  • 10 gms - salt
  • 100 gms - Sugar
  • 200 gms - Jaggery
  • 1/2 Coconut
  • 5 gms - cardamoms, crushed
  • oil for frying
  • water for the dough

How to Make Karjikai

  • Mix salt and maida together and rub it in a little ghee.
  • Add a little water and make a tight dough.
  • Set it aside.
  • Grate the jaggery and coconut.
  • Melt ghee in a pan, add the grated jaggery, coconut, sugar and crushed cardamom and stir over low heat to make a fine mixture.
  • Remove it and let it cool.
  • Make equal number of medium-sized balls out of the dough and the jaggery-coconut mixture.
  • Roll out the dough into puris.
  • Place one ball of the sweet mixture on one half of each puri.
  • Fold each puri into a crescent shape and seal the edges with small twists.
  • Heat oil in a kadai and deep fry the puris till they become golden brown.
  • Serve hot.
