Ingredients

  • 500 gms - Maida
  • 10 gms - salt
  • 100 gms - Sugar
  • 200 gms - Jaggery
  • 1/2 Coconut
  • 5 gms - cardamoms, crushed
  • oil for frying
  • water for the dough
  • How to Make Karjikai:

    1. Mix salt and maida together and rub it in a little ghee.
    2. Add a little water and make a tight dough.
    3. Set it aside.
    4. Grate the jaggery and coconut.
    5. Melt ghee in a pan, add the grated jaggery, coconut, sugar and crushed cardamom and stir over low heat to make a fine mixture.
    6. Remove it and let it cool.
    7. Make equal number of medium-sized balls out of the dough and the jaggery-coconut mixture.
    8. Roll out the dough into puris.
    9. Place one ball of the sweet mixture on one half of each puri.
    10. Fold each puri into a crescent shape and seal the edges with small twists.
    11. Heat oil in a kadai and deep fry the puris till they become golden brown.
    12. Serve hot.
