Ingredients

  • 1 cup - basmati Rice
  • 1.5 cups - Coconut Milk
  • 4 - Cardamoms
  • 2 - Cloves
  • 2 - Cinnamon sticks
  • Some palav leaves
  • 1 cup - mixed vegetables (green peas, carrots, cauliflower)
  • Some kismis, Cashew nuts (fried)
  • 1/2 cup - mixed fruits (apple, pineapple, papaya)
  • How to Make Kashmiri Pulav:

    1. Soak basmati rice for 20 mins.
    2. Take oil in a kadai. Heat it.
    3. Add cinnamon, cardamom, cloves and bay leaves.
    4. Fry for 5-6 mins.
    5. Now, add the vegetables and fry for 5 mins.
    6. Add salt.
    7. Add fried kismish, cashew nuts and add basmati rice.
    8. Fry for 2 mins.
    9. Add coconut milk. When it's almost cooked, add all the fruits. Cook completely.
    10. Kashmiri pulav is ready.
    11. Serve hot with pineapple or tomato raita.
