How to Make Kaththirikkai Kochchu

  • Cut eggplant into small cubes
  • Heat oil in a vessel, splutter mustards and add hing powder, fenugreek, and chana dal.
  • Fry lightly and add the eggplant and fry for sometime in medium heat.
  • Add tamarind extract, salt and let it boil till it turns semi solid.
  • Add turmeric and ground powder.
  • Let it boil for some more time till oil separates.
  • Before removing from fire add little powdered fenugreek to the mixture.
