Ingredients

  • 2 - Carrots
  • 1 - Potato
  • 1/4th - white squash
  • 1/4th - Pumpkin
  • 1 - Raw banana
  • 1/4th - cut Yam
  • 1 cup - grated Coconut
  • 1 tsp - Jeera
  • 3 to 4 - chillies
  • 4 tsp - Coconut oil
  • 1 tsp - Turmeric powder
  • Beans, cut long
  • Peas
  • Curd
  • Curry leaves
  • Salt to taste
  • How to Make Kerala Avial:

    1. Cut all the vegetables.
    2. Cook it well with salt and turmeric powder in it.
    3. Grind the coconut, jeera and chillies.
    4. Add the ground mixture to the cooked vegetables.
    5. When everything is cooked then cool it down.
    6. Beat the curd and mix it.
    7. Add the coconut oil.
    8. Garnish the avial with curry leaves.
    9. Serve it along with rice.
