  • 2 liters - Milk
  • 1 cup - Rice
  • 16 green Cardamoms (peeled)
  • 40 strands - Saffron (soaked in 1/4 cup hot milk)
  • 15 tbsp - Sugar (or as per taste)
  • 15 Almonds (sliced)
  • 15 Pistachios (sliced)
  • How to Make Kesar Rice Kheer:

    1. Wash and soak the rice in water for 20 minutes.
    2. Drain out the water from the rice and grind it coarsely.
    3. Boil the milk in a heavy bottomed vessel.
    4. After a boil add the rice and stir continuously. Simmer.
    5. Stir at regular intervals so the rice does not stick to the bottom of the vessel.
    6. Add the saffron and cardamoms.
    7. Boil till the rice is cooked and the milk thickens.
    8. Add sugar and cook till the sugar dissolves.
    9. Boil the almonds and the pistachios in 1 cup water for 5 minutes.
    10. Cool and peel off the skin.
    11. Finely slice the almonds, pistachios and add it to the kheer.
    12. Serve hot or cold.
