Ingredients

  • 1.5 cups - basmati rice, soaked in water for 2 hours, drained
  • 8 cloves, pounded
  • 4 pieces cinnamon, pounded
  • 4 cardamoms, pounded
  • 1/2 cup - Milk
  • 1/2 tsp - Saffron
  • 1 tsp - Cumin seeds
  • 1 tsp - chilli powder
  • 100 gms - cauliflower, chopped
  • 100 gms - peas
  • 2 tomatoes, chopped
  • 1 cup coriander leaves, chopped
  • 1/2 cup Ghee
  • Salt to taste

How to Make Kesariya biryani

  • Heat ghee in a pressure cooker.
  • Add pounded spices. Brown.
  • Add cumin seeds.
  • Add all vegetables. Stir fry.
  • Add rice and saffron mixed with milk. Add chilli powder and 4 cups - hot water.
  • Cook under pressure for 7 mins.
  • The rice should be fluffy and vegetables cooked. Serve with dal.
