  • Cucumbers - 2 medium size
  • Peanuts - 100gm (roasted, peeled and ground)
  • Green chillies - 1-2
  • Cumin seeds - 1 Tsp
  • Coriander leaves - as required
  • Fresh grated Coconut - 3-4 Tbsp (or as required)
  • Ghee - 1 tbsp
  • Salt to taste
  • How to Make Khamang kakdi (Cucumber):

    1. Peel and grate the cucumbers (if the cucumbers have large seeds, scrape off the seeds before grating).
    2. Sqeeze the grated cucumber to remove water.
    3. Discard the water.
    4. Add the ground peanut and salt to the cucumber and mix well.
    5. Heat ghee in a small pan.
    6. Add cumin seeds and allow to splutter.
    7. Then add chillies. Pour it over the cucumber and mix.
    8. While serving garnish it with coriander leaves and fresh grated coconut.
