Ingredients

  • 1 cup - Gram flour/Besan
  • 1/4 cup - Rice flour
  • 1tsp - Chilli powder
  • A few curry leaves
  • 1/4 cup - Raw peanuts
  • 20 - Cashew nuts
  • 3 - Garlic cloves (crushed)
  • A pinch of baking soda
  • Salt
  • Oil for Deep Frying

How to Make Khara Boondhi

  • Mix the gram flour, rice flour, salt, baking soda and chilli powder in a vessel with enough water to make a thick batter without any lumps (the batter should resemble idli batter).
  • Heat the oil for Deep Frying; add cashew nuts and fry until they turn brown.
  • Remove, add the peanuts to the oil and fry until they turn brown. Remove.
  • In the same oil, fry the crushed garlic cloves and curry leaves together until they turn crisp.
  • Remove from the oil, and keep all these fried ingredients in a large vessel.
  • Using a ladle, drop the batter through a boondhi ladle or a ladle with small round holes into hot oil.
  • Fry until it turns crispy, remove with a slotted spoon, and drain the excess oil with a paper towel.
  • Finish the remaining batter using the same process.
  • Add the chilli powder to the boondhis, fried cashews, fried garlic, fried peanuts and curry leaves, toss it gently and store in an air-tight box.
  • Enjoy with a cup of coffee.
