Ingredients

  • 1 kg - mutton, cut into serving portions
  • 250 g - Onions
  • 6 flakes - Garlic
  • 1" piece - Ginger
  • 250 g - carrots, sliced
  • a few sprigs Coriander leaves
  • 1 tsp - Turmeric powder
  • 4 - Cloves
  • salt to taste
  • 3 - medium tomatoes, blanched and sliced
  • salt and chilli powder to taste
  • 1 tsp - coriander powder

How to Make Khasa Kalia

  • Grind onions, ginger and garlic to a paste.
  • Heat 4 tbsps. ghee and fry the onion paste to a golden colour.
  • Put in the mutton and fry to a rich red colour.
  • Add all the spices with the exception of garam masala and cloves.
  • Mix well, put in the tomatoes and salt. Cook till dry. Cover mutton with hot water and cook till almost done.
  • Put in the carrots and continue cooking till the mutton and carrots are cooked. Remove from fire and set aside.
  • Heat 1 tbsp oil and fry the cloves in it and put over the mutton.
  • Sprinkle garam masala and coriander leaves on top before serving.
