Ingredients

  • 100 g - cashew nut powder
  • 50 g - unsweetened khova (mava)
  • 1/2 cup - sugar
  • 1/2 cup - ghee (clarified butter)
  • 2 tsp - corn flour
  • a pinch of cardamom powder
  • 2 tbsp - water
  • Silver foil for garnish For stuffing:
  • 2 tbsp - khova
  • A pinch of saffron colour
  • A few strands of saffron
  • 1 tbsp - mixed chopped dry fruits (pista, almond)

How to Make Khoya cashew roll

  • In a kadai, add sugar and water.
  • Make a 2 string syrup.
  • In a bowl, mix cashew nut powder and khova well.
  • Add it to the sugar syrup and mix well constantly on low heat.
  • Add 2 tbsp ghee.
  • Mix well for a min.
  • Add cornflour and mix well until it starts bubbling and starts to leaves the sides of the pan.
  • Add another 2 tbsp of ghee.
  • Add cardamom powder, mix and remove on a greased plate.
  • Allow to cool.
  • Mix all the stuffing ingredients together.
  • Spread it on cooled cashew-khova mixture.
  • Roll and cut into 1 inch pieces.
  • Roll in silver foil and serve.
