Ingredients

  • 500 g - khoya
  • 250 g - Rawa (semolina)
  • 100 g - ground Sugar
  • 150 g - Ghee
  • 50 g - each of Almonds and Pistachios (blanched and sliced)
  • 1 tsp - Cardamom powder
  • ½ tsp - baking powder
  • ½ tsp - Saffron (dissolved in 1 tbsp. of hot milk)
  • 2 - eggs
  • How to Make Khoya Jani:

    1. Mix together the khoya, semolina, sugar, ghee, baking powder and eggs and beat well till the mixture turns very smooth, like cake batter.
    2. Mix in the saffron and ¾th of the nuts and divide between 3 greased, medium sized thalis.
    3. Spread cardamom powder evenly on top and sprinkle with the remaining nuts.
    4. Bake in a moderate oven until it turns a nice golden colour.
    5. Serve hot or cold.
