  • 500 g - khoya
  • 250 g - rawa (semolina)
  • 100 g - ground sugar
  • 150 g - ghee
  • 50 g - each of almonds and pistachios (blanched and sliced)
  • 1 tsp - cardamom powder
  • ½ tsp - baking powder
  • ½ tsp - saffron (dissolved in 1 tbsp. of hot milk)
  • 2 - eggs

How to Make Khoya Jani

  • Mix together the khoya, semolina, sugar, ghee, baking powder and eggs and beat well till the mixture turns very smooth, like cake batter.
  • Mix in the saffron and ¾th of the nuts and divide between 3 greased, medium sized thalis.
  • Spread cardamom powder evenly on top and sprinkle with the remaining nuts.
  • Bake in a moderate oven until it turns a nice golden colour.
  • Serve hot or cold.
