Ingredients

  • 1.5 cups - kootu flour
  • 1 tbsp - oil salt
  • 1 cup - rajgiri toasted
  • 1 - Potato boiled and mashed
  • 1 tbsp - Coriander leaves finely chopped
  • 2 - Green chillies finely chopped
  • 1 tsp - Ginger grated
  • 1/4 tsp - Turmeric powder
  • 1/2 tsp - Cumin seeds
  • 1 tsp - Lemon juice extracted
  • salt
  • oil to shallow fry
  • How to Make Kootu Rajgiri Parathas:

    1. Method for dough:
    2. Mix all ingredients for dough.
    3. Knead to a soft pliable dough.
    4. Cover with a moist cloth, keep aside.
    5. Heat oil in a heavy pan, add cumin seeds.
    6. Add ginger, allow to splutter.
    7. Add mashed potatoes, lemon juice and coriander and mix well.
    8. Fold in toasted rajgiri grains.
    9. Keep aside till required.
    10. Divide dough into 6 parts, shape into balls.
    11. Divide the filling into 6 parts.
    12. Roll one ball of dough, to a rounds 5 inch in diameter.
    13. In the center, place one portion of the filling.
    14. Bring together all edges of round over filling.
    15. Press lightly to form a thick round.
    16. Dust lightly with kootu flour.
    17. Roll into a paratha 6 inches in diameter.
    18. Heat skillet (tawa), roast both sides lightly.
    19. Drizzle some oil, flip and on a low flame allow it to become golden brown in color.
    20. Repeat for other side.
    21. Serve hot with coconut or pumpkin chutney.
