Ingredients

  • Coriander leaves - 1 bunch (cleaned and chopped)
  • Basmati Rice - 2 cups
  • Green chillies - 2 to 3
  • Small Onions - 4 to 5
  • Garlic - 1 pod (optional)
  • Tamarind pulp - 1 tsp
  • Jeera - 1tsp
  • Salt to taste
  • Sunflower or any cooking oil - 1 tbsp
  • Gingili oil - 1/2 tbsp
  • How to Make Kothamalli Rice:

    1. Soak rice in water for 15 minutes.
    2. Pressure cook rice with 4 cups water till al dente.
    3. Meanwhile, grind together coriander, green chilli, onion, garlic, salt and tamarind pulp.
    4. Heat sunflower oil.
    5. Splutter jeera seeds.
    6. Add the ground mixture and saute till the raw smell reduces.
    7. When you get a nice aroma switch off the stove.
    8. In a wide plate spread the rice, add gingili oil.
    9. Then, add the ground mixture and mix uniformly.
    10. Garnish it with fresh coriander chopped or grated carrot.
