  • 3 cups - finely chopped coriander leaves
  • 1/2 cup - finely chopped pudina leaves
  • 2 cups - besan (chickpea flour)
  • A handful - rice or corn flour
  • 1 tsp - ginger-garlic paste
  • 1 tsp - red chilli powder
  • 1 pinch -turmeric powder
  • 1 tsp - dhania powder
  • 1/2 tsp - ajwain seeds (omam)
  • 1 tbsp - oil
  • 1 big pinch -cooking soda
  • Salt

How to Make Kothambir Vadi

  • In a wide bowl, mix all the ingredients thoroughly with water without any lumps. The batter should be like the dosa batter. Do not add more water.
  • Take a cooker container and spread some ghee on it.
  • Pour the batter and steam it in the cooker like idlis.
  • Do not put on the whistle.
  • Steam it for 15 minutes till it is cooked well.
  • Check if cooked by inserting a knife. Cool and cut into squares.
  • Take a non-stick pan and drizzle with some oil.
  • Place the kothambir squares one by one and grill till crisp.
