1/2 cup - green gram dal
1 pinch -
1 big -
2 - carrots, chopped
1/2 cup - string beans, chopped
1 big - tomato, chopped
1 - onion, sliced
2 - green chillies, cut into big pieces
1 inch - fresh ginger, finely chopped
Curry leaves, a few
1 tbsp -
Chopped fresh coriander leaves, for garnishing
1/4 tsp -
2 tbsp - cooking oil
1.5 tsp - salt
Ingredients for grinding:
2 tbsp - fresh grated
1/2 tsp -
1 tbsp -
1 inch stick -
1/2 tsp - sambar powder
How to Make Kumbakkonam kadappa
Pressure cook green gram dal and turmeric powder.
Pressure cook potato along with the dal in a different stackable container.
Cook chopped carrots and chopped beans separately to avoid them becoming mushy.
Grind all the ingredients for grinding with a little water, into a slightly coarse paste.
Heat oil in a pan and add cumin seeds.
Add sliced onions, green chillies, ginger and curry leaves.
Saute till onions become transparent.
Stir in the ground paste and cook for 2 minutes.
Add chopped tomatoes and cooked carrots and beans.
Add peeled and crumbled potatoes and stir well.
Add the pressure cooked mushy dal and salt.
Simmer for a few more minutes till you get a pleasant aroma.
Garnish with roasted cashew nuts and fresh coriander leaves.
Serve with idlis or dosas.
