Ingredients

  • Lady's fingers - 30
  • Green chillies - 12
  • Tamarind paste - 2 tsp
  • Coriander powder - 1.5 tsp
  • Tomato - 1
  • Onion - 1
  • Jaggery - 1/2 tsp
  • Salt to taste
  • Turmeric powder - 1/4 tsp
  • Oil -1 tsp
  • Mustard - 1/4 tsp
  • Urad dal - 1/2 tsp
  • Curry leaves - a few

How to Make Lady's Finger Curry

  • Chop onion, tomato, and chillies.
  • Cut ladyfingers into thin slices.
  • Heat oil in a pan, and fry the lady finger till the sliminess disappears and keep aside.
  • Heat oil and splutter mustard.
  • Add urad dal, curry leaves, and green chillies and saute.
  • Then, add onion and tomato, and saute for a while.
  • Add the fried ladyfingers, salt, coriander powder, tamarind paste, turmeric powder, jaggery and little water, and cook till done.
  • Serve hot.
