  • 1.5 kg. lamb shanks
  • 4 tbsp. oil
  • 1” Cinnamon stick
  • 350 gms. onions, diced
  • 150 gms. dates, pitted
  • 2 tbsp. Honey
  • 1 tsp. black pepper
  • ½ tsp. salt
  • Toasted Almonds and sesame seeds, for garnish
  • How to Make Lamb Confit with Dates and Almonds:

    1. Place lamb, oil, cinnamon and onion in a heavy saucepan and sauté for 30 seconds on high heat.
    2. Add enough water to cover the meat.
    3. Bring to a boil and simmer gently for about 2 hours.
    4. Remove lamb and reduce liquid to 2 cups by simmering further.
    5. Return lamb, add dates and honey. Simmer for about 20 mins.
    6. Check seasoning and remove from heat.
    7. Garnish with almonds and sesame seeds and serve.
