Ingredients

  • 1/2 kg-lauki (green gourd / doodhi) - peel and cut into 1 inch cubes
  • 2- Tomatoes - medium sized - chopped fine
  • 3 tsp-oil
  • 1 tsp- Cumin seeds (jeera)
  • 3 leaves-bay leaves (tez patta)
  • 1 pinch-asafoetida (hing)
  • salt
  • 1/4 tsp- Turmeric powder (haldi)
  • 1.5 tsp -coriander powder (dhaniya powder)
  • 1/2 tsp -cumin powder (jeera powder)
  • 1/2 tsp - Red Chilli powder (mirchi powder)
  • green Coriander leaves (dhaniya patti) chopped fine for garnishing
  • How to Make Lauki-Tamatar Subzi:

    1. In a pressure cooker, heat oil and add asafetida
    2. Add jeera and bay leaf.
    3. Add chopped tomatoes.
    4. Fry the tomatoes - till they are soft/wilted.
    5. Add the lauki pieces.
    6. Add salt and other masala powders.
    7. Mix well and cover the cooker.
    8. Take off the fire after 3 whistles
    9. Garnish with fresh coriander.
    10. Serve with rotis/parathas.
