How to Make Layered Chicken Biryani

  • Cut the chicken into 1.5 inch pieces, wash and drain.
  • Cut onion, ginger, garlic, green chilli, tomato in small pieces and blend to a paste.
  • Marinate the chicken with curd, vinegar, turmeric powder, coriander powder, chilli powder and the ginger-garlic paste for an hour or more.
  • Take the rice in the rice cooker, add 6 cups of water and all the ingredients for rice - except butter - and set it to cook.
  • Now, heat a heavy bottomed pan, pour the oil and then the marinated chicken and cook till the chicken is soft.
  • Add salt, cover with a lid and cook till it is tender.
  • Add the garam masala and the biriyani masala.
  • Take another heavy bottomed pan, heat it, add the butter and turn off the oven.
  • Add the cooked rice in butter and mix slowly and carefully so that the rice grains don't break.
  • Take the serving tray, pour a layer of rice, add a layer of chicken and then another layer of rice and then chicken.
  • Lastly, sprinkle some rice over the chicken and cover the serving tray.
