Ingredients

  • 1 cup - rice, washed, soaked in water for 30 minutes
  • 1 tbsp - low fat cheese
  • 1 cup - skim Milk
  • 1/2 cup - green peas, shelled
  • 2 - 3 flakes - garlic, grated
  • 1/2 cup - either fresh Spinach puree
  • 1 - onion, pureed
  • 1/2 tsp - biryani masala powder
  • 1/2 tsp - Coriander seed powder
  • 2 - 3 pinches - Asafoetida
  • 1/2 tsp - Cumin seeds
  • 1/2 tsp - sesame seeds
  • Lemon to taste
  • salt

How to Make Lean Green Rice

  • Heat pressure pan.
  • Add cumin and sesame seeds and asafetida and allow to splutter.
  • Add peas, garlic, onion puree and peas etc.
  • Stir and cook for 2 minutes, by allowing to scald.
  • Add rice, stir and add puree and 2.5 cups water.
  • Add salt, lemon juice and all masalas and stir.
  • Cover lid and cook for 3 - 4 whistles.
  • Cool, remove from pan, fluff up a little with a fork.
  • Serve hot with curd or kadhi.
