Ingredients

  • 1 cup - rice, washed, soaked in water for 30 minutes
  • 1 tbsp - low fat cheese
  • 1 cup - skim Milk
  • 1/2 cup - green peas, shelled
  • 2 - 3 flakes - garlic, grated
  • 1/2 cup - either fresh Spinach puree
  • 1 - onion, pureed
  • 1/2 tsp - biryani masala powder
  • 1/2 tsp - Coriander seed powder
  • 2 - 3 pinches - Asafoetida
  • 1/2 tsp - Cumin seeds
  • 1/2 tsp - sesame seeds
  • Lemon to taste
  • salt
  • How to Make Lean Green Rice:

    1. Heat pressure pan.
    2. Add cumin and sesame seeds and asafetida and allow to splutter.
    3. Add peas, garlic, onion puree and peas etc.
    4. Stir and cook for 2 minutes, by allowing to scald.
    5. Add rice, stir and add puree and 2.5 cups water.
    6. Add salt, lemon juice and all masalas and stir.
    7. Cover lid and cook for 3 - 4 whistles.
    8. Cool, remove from pan, fluff up a little with a fork.
    9. Serve hot with curd or kadhi.
