Ingredients

  • 1 cup - Leeks (chopped finely)
  • 1 tbsp - Ginger (chopped)
  • 6 - Garlic cloves
  • 1 tbsp - Coriander seeds
  • A few curry leaves
  • 4 - Dry red chillies
  • 1 - Tamarind (blueberry sized)
  • Salt
  • Oil
  • 1/2 tsp - Mustard seeds
  • 1/4 tsp - Urad dal
  • A few curry leaves

How to Make Leeks Chutney

  • Heat a few drops of oil, fry the chopped ginger, garlic, dry red chillies, coriander seeds and curry leaves until they turn brown.
  • Add the chopped leeks to the same pan and fry until they shrink a bit.
  • Grind the sauteed leeks, fried spices, tamarind, salt, and water into a coarse paste.
  • Heat enough oil, splutter the mustard seeds, urad dal, and curry leaves. Add this tempering to the ground paste, mix well and serve as a side dish.
