  • 1 cup - Leeks (chopped finely)
  • 1 tbsp - Ginger (chopped)
  • 6 - Garlic Cloves
  • 1 tbsp - Coriander seeds
  • A few Curry leaves
  • 4 - Dry Red Chillies
  • 1 - Tamarind (blueberry sized)
  • Salt
  • Oil
  • 1/2 tsp - Mustard Seeds
  • 1/4 tsp - Urad Dal
  • A few Curry leaves
  • How to Make Leeks Chutney:

    1. Heat a few drops of oil, fry the chopped ginger, garlic, dry red chillies, coriander seeds and curry leaves until they turn brown.
    2. Add the chopped leeks to the same pan and fry until they shrink a bit.
    3. Grind the sauteed leeks, fried spices, tamarind, salt, and water into a coarse paste.
    4. Heat enough oil, splutter the mustard seeds, urad dal, and curry leaves. Add this tempering to the ground paste, mix well and serve as a side dish.
