Ingredients

  • 100 g - gram flour (besan)
  • 1 tsp - ground black pepper
  • 1/4 tsp - Turmeric powder
  • 1 tbsp - soda-bi-carb
  • 2 tbsp - Lemon juice
  • 2 tbsp - oil
  • 2 tbsp - Red Chilli and Garlic paste
  • salt to taste
  • oil for frying
  • Special Equipment: Sev machine/press

How to Make Lehsuni (Garlic) Sev

  • Mix besan flour with black-pepper powder, lemon juice, soda-bi-carb, oil, and salt.
  • Add the red chilli and garlic paste with enough water to knead into a smooth dough.
  • Shape the dough into a thick cylinder.
  • Now, place this dough in the sev machine.
  • Heat oil in a frying pan.
  • Drop a tiny piece of dough in it.
  • If it rises immediately, the oil is hot enough.
  • Now, holding the machine over the hot oil, press the dough out in an even, circular movement.
  • Fry the sev for about 2-3 minutes on medium flame till lightly golden-brown in color.
  • Remove and drain on a tissue paper, and repeat with the remaining dough.
  • Serve hot.
