  • 100 g - gram flour (besan)
  • 1 tsp - ground black pepper
  • 1/4 tsp - Turmeric powder
  • 1 tbsp - soda-bi-carb
  • 2 tbsp - Lemon juice
  • 2 tbsp - oil
  • 2 tbsp - Red Chilli and Garlic paste
  • salt to taste
  • oil for frying
  • Special Equipment: Sev machine/press
  • How to Make Lehsuni (Garlic) Sev:

    1. Mix besan flour with black-pepper powder, lemon juice, soda-bi-carb, oil, and salt.
    2. Add the red chilli and garlic paste with enough water to knead into a smooth dough.
    3. Shape the dough into a thick cylinder.
    4. Now, place this dough in the sev machine.
    5. Heat oil in a frying pan.
    6. Drop a tiny piece of dough in it.
    7. If it rises immediately, the oil is hot enough.
    8. Now, holding the machine over the hot oil, press the dough out in an even, circular movement.
    9. Fry the sev for about 2-3 minutes on medium flame till lightly golden-brown in color.
    10. Remove and drain on a tissue paper, and repeat with the remaining dough.
    11. Serve hot.
