  • 1 vanilla bean, split lengthwise
  • 1 cup short grain Rice
  • 3 cups Milk
  • 2 tbsp. golden Raisins
  • Grated rind of 2 Lemons
  • 2 tbsp. granulated sugar, or to taste
  • 1 ¼ cups plain Yoghurt
  • Ground nutmeg, to serve

How to Make Lemon and Golden Raisin Rice Pudding

  • Scrape the seeds from the vanilla bean.
  • Add the seeds and bean to a saucepan with the rice, milk, golden raisins and lemon rind.
  • Bring to a boil, then reduce the heat and simmer for 15-18 minutes, until the rice is swollen and soft.
  • Add the sugar to taste and let cool for 10 minutes.
  • Remove the vanilla bean from the rice, then stir in the yoghurt.
  • Serve sprinkled with a little ground nutmeg.
