Ingredients

  • 200 g - Refined flour or Maida
  • 4 - eggs
  • 200 g - Sugar powdered
  • 200 g - Butter
  • 1 tsp - baking powder
  • 1/4 tsp - salt
  • 2 tsp - fresh Lime juice or Cream of tartar
  • 1 tsp - vanilla essence
  • 1 tsp - grated Lemon rind
  • How to Make Lemon Cake:

    1. Sift the flour, salt and baking powder together.
    2. Cream the butter and sugar together in a suitable bowl.
    3. Add the beaten eggs, lime juice/cream of tartar, lemon rind and vanilla essence and mix well.
    4. Fold in the flour a little at a time.
    5. Add a little milk if the mixture is too thick.
    6. Pour into a greased and floured cake tin and bake for 40 to 45 minutes or till the cake is cooked and brown on top.
    7. For the lemon topping:
    8. Whip together 100 g fresh cream, 100 g icing sugar, 1/2 tsp vanilla essence, 1/4 tsp lemon food color and 2 tsp lime juice till it becomes creamy.
    9. Pile on top of the cake and spread with a spatula.
    10. Decorate as desired.
    11. Refrigerate and serve when required.
