200 g - refined flour or maida
4 - eggs
200 g - sugar powdered
200 g - butter
1 tsp - baking powder
1/4 tsp - salt
2 tsp - fresh lime juice or cream of tartar
1 tsp - vanilla essence
1 tsp - grated lemon rind
How to Make Lemon Cake
Sift the flour, salt and baking powder together.
Cream the butter and sugar together in a suitable bowl.
Add the beaten eggs, lime juice/cream of tartar, lemon rind and vanilla essence and mix well.
Fold in the flour a little at a time.
Add a little milk if the mixture is too thick.
Pour into a greased and floured cake tin and bake for 40 to 45 minutes or till the cake is cooked and brown on top.
For the lemon topping:
Whip together 100 g fresh cream, 100 g icing sugar, 1/2 tsp vanilla essence, 1/4 tsp lemon food color and 2 tsp lime juice till it becomes creamy.
Pile on top of the cake and spread with a spatula.
Decorate as desired.
Refrigerate and serve when required.
