  • 200 g - refined flour or maida
  • 4 - eggs
  • 200 g - sugar powdered
  • 200 g - butter
  • 1 tsp - baking powder
  • 1/4 tsp - salt
  • 2 tsp - fresh lime juice or cream of tartar
  • 1 tsp - vanilla essence
  • 1 tsp - grated lemon rind

How to Make Lemon Cake

  • Sift the flour, salt and baking powder together.
  • Cream the butter and sugar together in a suitable bowl.
  • Add the beaten eggs, lime juice/cream of tartar, lemon rind and vanilla essence and mix well.
  • Fold in the flour a little at a time.
  • Add a little milk if the mixture is too thick.
  • Pour into a greased and floured cake tin and bake for 40 to 45 minutes or till the cake is cooked and brown on top.
  • For the lemon topping:
  • Whip together 100 g fresh cream, 100 g icing sugar, 1/2 tsp vanilla essence, 1/4 tsp lemon food color and 2 tsp lime juice till it becomes creamy.
  • Pile on top of the cake and spread with a spatula.
  • Decorate as desired.
  • Refrigerate and serve when required.
