  • 3/4 cup - Lemon juice
  • 1 tbsp - Lemon peel (grated)
  • Butter (cut into pieces)
  • 1/4 cup - Sugar
  • 4 eggs, lightly beaten
  • 8 sweet tarts
  • How to Make Lemon curd tarts:

    1. Combine lemon juice, peel, butter and sugar in a double boiler over simmering water, stirring continuously until butter has melted.
    2. Add beaten eggs to lemon mixture, stirring constantly with a wooden spoon.
    3. Continue to stir over medium heat until the mixture is quite thick - it should coat the back of the spoon while taking care not to overcook or it will separate.
    4. Remove from heat.
    5. Refrigerate so that the curd can cool and thicken.
    6. Pipe the curd in tarts with a piping bag, garnish with a lemon slice and serve chilled.
