Ingredients

  • 2 cups - flour
  • 4 eggs
  • 1 cup - powdered Sugar
  • 1 cup - Milk
  • 2 tbsp - Butter
  • 2 tbsp - custard powder
  • 3 tsp - Lemon juice
  • 2 tsp - baking powder
  • 1/2 rind - a Lemon
  • How to Make Lemon Flavoured Sponge Pudding:

    1. Sift flour and baking powder. Cut lemon rind into thin strips. Whip eggs.
    2. Add sugar and butter to the eggs and beat until creamy.
    3. To a cup of water, add custard powder and cook over slow fire.
    4. Stir continuously until smooth and thick. Add milk.
    5. Combine the custard mixture with the sieved ingredients.
    6. Fold in whipped egg-butter mixture.
    7. Add lemon juice and mix gently. Sprinkle lemon strips.
    8. Pour into a well-greased baking dish and bake at 180 degrees until done.
