  • 2 cups - flour
  • 4 eggs
  • 1 cup - powdered sugar
  • 1 cup - milk
  • 2 tbsp - butter
  • 2 tbsp - custard powder
  • 3 tsp - lemon juice
  • 2 tsp - baking powder
  • 1/2 rind - a lemon

How to Make Lemon Flavoured Sponge Pudding

  • Sift flour and baking powder. Cut lemon rind into thin strips. Whip eggs.
  • Add sugar and butter to the eggs and beat until creamy.
  • To a cup of water, add custard powder and cook over slow fire.
  • Stir continuously until smooth and thick. Add milk.
  • Combine the custard mixture with the sieved ingredients.
  • Fold in whipped egg-butter mixture.
  • Add lemon juice and mix gently. Sprinkle lemon strips.
  • Pour into a well-greased baking dish and bake at 180 degrees until done.
