  • For the filling:
  • 1x9" baked pastry shell
  • 2 tsp - Cornflour
  • 1 cup - Sugar
  • 1 tbsp - Grated lemon rind
  • 1/2 cup - Lemon juice
  • 1 cup - Water
  • 3 egg yolks
  • Meringue:
  • 3 - Egg whites
  • 3 tsp - Castor sugar

How to Make Lemon Meringue Pie

  • Mix sugar and cornflour, add water gradually, add lemon juice and rind and cook all over slow fire until thick and boiling.
  • Take it off fire and add one egg yolk at a time, beating well.
  • When all yolks are used up, strain the mixture through a sieve.
  • Pour all in a baked pie shell.
  • Cover with meringue and put in a hot oven until the top is golden.
  • Meringue:
  • Beat egg whites with a pinch of cream of tartar very stiff, add sugar and beat, then pile on the pie.
