Ingredients

  • 100 g - Marie biscuits
  • 1/2 cup - Cream cheese
  • 1/2 cup - powdered Sugar
  • 1/2 cup - fresh Cream
  • 1/3 cup - Butter
  • 2 eggs, large, separated
  • 1 tbsp - gelatin
  • 2 tsp - grated Lime rind
  • 2 tbsp - Lime juice
  • For chocolate sauce:
  • 1.5 cup - water
  • 1/2 cup - Sugar
  • 2 tbsp - Corn flour
  • 2 tbsp - Butter
  • 1 tbsp - cocoa
  • 1 tsp - vanilla essence

How to Make Lime Cheese Cake

  • Melt butter. Crush the biscuits.
  • Mix both together and press into a greased pie dish.
  • Bake at 200 degrees centigrade for 10-12 minutes.
  • Cool and keep in the freezer.
  • Soak the gelatin in 1/2 cup of water.
  • Separate the eggs.
  • Add lime rind and 1/2 cup sugar to yolks and beat till thick. Add the milk.
  • Cook and stir on very low heat till the mixture thickens (Do not boil).
  • Dissolve gelatin over a low flame and add to the custard. Cool completely.
  • Mix cream cheese with lime juice and add to the custard. Add lightly beaten cream.
  • Beat the egg whites stiffly.
  • Add remaining sugar little at a time, beating well after each addition.
  • Fold gently into the cheese mixture.
  • Pour into the pie dish and leave to set in the refrigerator (Not freezer). Decorate with grated chocolate and serve with chocolate sauce.
  • For chocolate sauce:
  • Mix all the ingredients together except butter.
  • Place on fire, cook and stir till it begins to boil.
  • Lower the flame and simmer for 2-3 minutes. Remove from fire, add butter.
  • Cool and chill in refrigerator.
